Greek Bruchetta

I made this for a Super Bowl party, and then again for small group on Tuesday night. It did not disappoint either time. You gotta love 6 ingredients, too!
You need:
Olive oil
3-4 Roma or Plum Tomatoes
Scallions (green onions)
1 lb. of Feta
Greek seasoning (approx. 3 tsp)
1 loaf French bread, baguette
a large platter (the kind that you registered for when you got married, and have only used once)

Pour enough olive oil to cover the bottom of the platter. Dice the tomatoes and chop the onion and toss them into the oil. Crumble the feta and toss it into the oil, too. Sprinkle the Greek seasoning over top. Gently stir it all together. Slice the bread and serve with the dip.

Cathy's Banana Bread

I have a great recipe for Chocolate Chip Banana bread; however, I've recently found myself with bananas and no chocolate chips. (I know, terrifying!) So, I found this one here, and it's baking as we speak...

Ingredients
  • 1 cup mashed bananas
  • 1 cup sour cream
  • 1/4 cup margarine
  • 1 1/3 cups white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan, or two 7x3 inch loaf pans.
  2. Combine banana and sour cream. Set aside. In a large bowl, cream together the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and banana mixture. Combine the flour, baking soda, baking powder and salt; stir into the banana mixture. Spread the batter evenly into the prepared pan or pans.
  3. Bake for 50 minutes in the preheated oven, or until a toothpick inserted into the center of the bread comes out clean.

No-Bake Energy Bites

Delicious AND nutritious, I think ;)

1 Cup oatmeal
1/2 Cup peanut butter (or other nut butter)
1/3 Cup honey
1 Cup coconut flakes
1/2 Cup ground flax seed
1/2 Cup mini chocolate chips
1 tsp vanilla

Mix everything above (I did dry ingredients first, then wet one at a time) in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.
